I super highly recommend getting the New 17" Blackstone E-Series electric Indoor Griddle and you could use it outside too if you ever wanted.
It has the non-stick griddle, has a attachable plastic grease trap in the back, has a lid, digital temp control knob, and is super easy to wipe clean and can cook pretty much everything on it. Perfect for the truck cause it doesn't take up much room. Breakfast, lunch, and dinner brother…. and they have 'em at Walmart for only $100 bucks.
The instapot…is very well insulated, it'll get warm,but not hot on the exterior.
