    I just made this (started yesterday with the broth and rest overnight) and just the tasting now after two hours simmering, OMG!๐Ÿ˜ณ๐Ÿ˜‹๐Ÿ‘Œ๐Ÿพ
    Had to leave out peppers and okra as a side option…
    While letting it cool before fridge, had a sample with some basmati rice and a glass of cabernet. ๐Ÿฒ๐Ÿท

    My Mom (RIP) was a Creole Chef from "Nawlins." The way you cooked your gumbo was almost to the letter the way she (and I) cooked hers. The only difference is that she added seafood stock to the chicken broth. I also add crawfish tails when I'm showing off my culinary skills for family and friends in Baton Rouge. Thank you for keeping your gumbo authentic. I've seen people put ham, turkey necks and other (IMO) non-traditional meats in their creations and call it gumbo. The tradition and culture of gumbo is important to me and you uphold both to the letter. I am now a subscriber.

    Question, so I've seen so many cooks using those enamel coated dutch ovens. Are they any good? I've heard stories of the enamel chipping off or wearing down.
