I just moved into my first house, it's cold and raining outside and watching this video has inspired me to cook my first cooked meal in my new kitchen – minestrone soup π
So nice to see an old fashioned recipe vid from you Lauren! I make paste e fagioli all the time and I keep the pasta separate. I'm making a big ol' batch and eating it all week and it avoids mushy noods! Tip for any Canadians: you can get generic vegan chicken (and beef) bouillon cubes from the Bulk Barn! They come in gold and silver foil and they are actually so tasty. And very affordable, of course, highly recommended! MUCH cheaper, tastier, and more efficient than say buying tetrapacks of veggie stock from the store.
