With a few minor variations, this is my daily lunch and I never get tired of it! I like to add a bunch of sprouts I grow at home to the salad ingredients, and change up the bean spreads for variety. My current fave is smokey black beans (cooked in beer, soy sauce, liquid smoke, with onions, garlic, and a little cumin) And this may sound weird, but when I don't have a grain cooked I just throw in some dry oats. They moisten quickly with the dressing, absorb the flavors, add fiber and nutrition, and help bind the salad so it doesn't fall apart when you eat it.

A huge array of salad veggies and a good dressing always make such a good wrap. I recently bought Lissa's (Lissa of Raw Food Romance) eBook on how to make my own wraps in the Dehydrator. And OMG, it takes wraps to a whole new level. Each recipe makes two huge (and I do mean huge) wraps. You can fill those suckers massively. The eBook has a ton of links throughout, showing step-by-step of all and anything you need clarification on. We just love those wraps. One wrap, fully filled and cut in half, could actually be a whole meal for two people. Your wrap looked delicious!
