    Made it and it did NOT disappoint. As always, you say to put our touch into it which I did. Added fresh garlic and onions…I had home grown jalapenos which I added (1) to the mix and I also had Mexican flavored canned tomatoes which worked perfectly. My husband loved it. We had a good amount of leftovers, so we're reheating and putting a fried egg on top of it for breakfast. This was a really good recipe…good for Keto and healthy. Thank you. xoxo

    Thank you Miss Lori!! I knew it would be delicious, and it was. I used, ground venison, instead of ground beef. black beans, instead of the corn, then shredded some Amish smoked cheddar to melt over the top. I didn't have chips, so I thought about French fried onions, then forgot to add them. It was still quite yummy.

    This dish looks mostly wonderful. Our garden was flooded out so many times this spring. We keep replanting and I only have 1 squash plant that survived, all our new potato’s rotted in the ground. I went to the farmers market for squash, tomatoes and cucumbers. I will bet this recipe would be great in a Mexican cornbread!! Thank ya for sharing

    Please tell me that you know how to make chocolate rolls… my grandma made them all the time! Apparently they are a known recipe in Arkansas originally from the 1880’s. I can’t find a recipe to save my life!

    Sorry I missed this the other day. Been looking for another yellow squash recipe, now I have one. With so many yellow squash making at one time, we needed something new before getting burned out. Thanks for saving my bacon ! lol :~)

    Made this last night for dinner, the difference was i added sweet peppers and a few hot peppers from the garden, I didn't have bell peppers. I made a 7quart dutch oven. I had about 1/2 qt left over. My boys and husband polished it off so quickly. I put a small amount away in the back of the fridge to have today for lunch. Great recipe I used 2 large zucchini and 3 pattypans large from the garden. So yummy. thanks for sharing. Now I need a recipe for my green beans. Just harvested 12 # beans this weekend.
