    I just made this… however, I used a bag of Mexican blend shredded cheeses instead of mozzarella and cooked cornbread as a side. The family really liked it!

    Hello. I made this and the following is the quantities that I used in case this is useful to anyone else 🙂 : 1 red onion, 3 garlic cloves, 1 red pepper, 2 spring onions, 1 tin each of corn and beans, 150g of mild cheddar cheese (didn't have mozzarella), a squirt of tomato paste, 150g basmati rice, 250g mince, 1 TSP of all the herbs except cayenne pepper where I used 1/2 TSP & finally 750ml chicken stock. This made enough for around 5 people! First attempt though and was delicious 😊
