haven't tried the recipe (I don't have an instant pot) but I wanted to say that I appreciate you using a reasonable amount of garlic, and not, like, 2 cloves. 😆
I've seen folks make whipped cream and mashed potatoes with a beater blade attached to either clean power drills or impact drivers. You can probably do immersion blending if you have a proper cover to protect the drill or impact.
Love butter chicken and I think it's great you two have gotten into Indian food. Mind you there are a million interpretations of butter chicken, my favourite shop-bought version is this one where the spice mix is made in Tipton near Birmingham (the UK original Birmingham) and it's a bit spicier than the norm.
