    The crêpe complèt is all wrong.
    No oven.
    Make the dough (ideally, you'd make a savory dough with buckwheat flour), add to pan, when one side is done flip over, then add egg, spread the white but keep the yolk in the center. Add cheese and ham (no prosciutto) and keep in pan until egg white is hard and cheese starts to melt.

    Personally I think I prefer Swedish pancakes over crêpes, they have the same versatility as crêpes but are just ever so slightly thicker that makes it a lot easier to work with.
