Pretty good. We do it a little differently based on "My Father's Book Of Southern Italian Peasant Food" where the mozzarella is the star and the ricotta the partner. Sausage was always the favorite at the restaurant. We brushed with beaten egg rather than oil.

Interesting you don't see much about Stromboli, which is similar to Calzones. Calzones are a folded over crust pie, while Stromboli is made more like a wrap and usually has meat added. Maybe because Stromboli is Italian-American, rather than an Italian tradition. Much like the differences in US pizza compared to Italy. .
I like this guy and what he does but that's not how mozzarella is pronounced, even in Italy.
