I would add the bell peppers last after I had cooked the chicken with the onion. The 🫑 bell peppers do not need to be cooked long. Just heat them up in the stir fry for several seconds so the bell pepper remain crunchy and fragrant 😋😋😋😋😋
Have you caught any of Kenji's vids where he attacks bell peppers? His knife work on those is inspiring for making it even simpler to get your bells ringing easily for stir fry (or any other) use.

Just devoured our dinner. I had asparagus to use up so that got tossed in too. Funny thing is we have a wok for a flame stove but we have a glass top. So we fired up the propane burner on the bbq outside, in the snow. Life is fun. And this is now a go to dish for us. Thanks.😊

Sometimes cashew chicken also tastes good with black bean 🫘 garlic sauce, too !

Shouldn’t you stir fry the onions first to “flavour up” the wok ?
You also need cornstarch to marinate so that the chicken becomes tender when cooked.
Garlic press is difficult to clean up.
Why didn’t you dice the ginger … ?
