    I'm a little skeptical with this, but sometimes I cook veggie chicken soup I add chickpeas and throw the water from the can. Next time I'll save it and I'll give this a shot.

    I call fake. There was a cut at the spoon. It went from liquid to solid in a millisecond. Typically the get that consistency, you need to add bloomed gelatin or something to make it firm but still airy rich. Also chilling doesn't work in place of gelatin because it's just gonna have the texture of a really crystalized chocolate ice cream. Wait, I just realized those are egg whites they're using. You better be using some really high quality eggs for this so that you don't get salmonella. Also egg whites need a stabilizer or else they'll deflate. Again no, chilling isn't a viable method
