    You did this recipe weirdly. Usually you'll do the whey protein onto the chicken. Then dredge them into the eggs. Then into the spice+pork rind mixture. You would take the oat fiber would be the substitute for the whey protein in this kind of recipe…

    Sorry to break it to you but if you'd take extra virgin avocado oil it's somke point would be way lower, just as olive oil because it's mostly unsaturated fats, that thing you have with a high smoke point it's refined and has gone through some if not most of the proceses seed oils go through, so it's already heated and damaged. That's also why it no longer has flavour, real avocado oil tastes like avocado. So if you're avoiding seed oils you shuld avoid this too.

    All the other options you gave are way better as they're mostly saturated fats wich are much more stable

    Just had to let you know, I made the chicken fingers tonight, using the crushed pork rinds and your recipe, including the oat fiber….what a game changer! These were the best of any of the fried chicken recipes I have tried since changing to a Keto lifestyle! They were absolutely delicious!!!

    Hi Wes, I ground a mixture of almonds, pecans & walnuts in the food processor & use that for breading. I’m usually mix them with cheese ( not the green can ) Italian seasoning, salt pepper. It’s good.

    I just tried my chicken with your pork rinds & oat fiber……that oat fiber is a game changer! I used my air fryer & left it alone…..oh my so crunchy! My husband (non keto) loved it too! Thanks! Love your channel!

    I made these tonight. Wonderful recipe!!! I did the protein powder recipe with a few kimchi flavored pork rinds added. I did forget to add the salt to the oat fiber. It was needed. But these came out AAAAAAhhhhmazing. I also used the dredging for zucchini coins. Those were wonderful as well. I think I would have only needed half of the oat fiber as I had quite a bit left over. Other measurements were right on. I will definitely be using this recipe again and again. No need to look at any others. Fish is next as I have been craving a fish sandwich. Thank you for sharing YOUR recipe.
