I had never had leeks before one trip to the U.K. where our hostess made potato and leek soup. She cut the root off and the top green part off, then sliced the white down the center and then sliced it across. Then put it into a bowl of water like you did, Cris. Easy to do either way! But, definitely need to rinse those things really well, apparently!

That does look good. I might be one of those people that doesn't want to deal with the leeks, though. 😀
Also, Try taking a cup or so of the soup, blend it in a bullet blender, then pour that back into the soup to thicken things up too. 👍🏼
