    I've been making cheesecakes for 15 years now, but have yet to try a keto one (or three). But funny little story here, thinking of you saying at the beginning you didn't really like cheesecake; my father absolutely refused to even try cheesecake, not understanding that it was a dessert–he thought it was a cake made of cheese, such as cheddar (he loved cheese, but in savory applications)–so I fooled him when I made a cheesecake but in a deep dish pie pan for his and Mom's 50th wedding anniversary. Dad's face when he took that first bite–seeing your expression was like looking at him 19 years ago, and from that moment on, he would ask me if I'd please bring a cheesecake for our family potlucks 😊.

    I'm going to have to make these now. They look too good not to make one.
    I'll let everyone in on a secret everyone probably knows already. When using a springform pan for a cheesecake, or any cake, I butter the sides and bottom of the pan heavily then flour it. Yes, use what flour type you like but flour it. The pan seals itself too. You get a little browning around the edge of the cheesecake which makes the interior color pop in contrast.

    My grandma's homemade Graham cracker have cinnamon, nutmeg, cloves and vannilla. So next time use 1/3 of each dry spice and add 1/4 tsp pure vanilla extract to see if you like the crust better.

    My partner, his parents, neighbors all love my cheesecake but because it was not keto I make it only once a year.
    My partner said to say that my cheesecake never tastes like eating a block of cream cheese. Lol
    Now I have ideas to convert my cheesecake to be keto FRIENDLY.
    IF I can do that then we can have cheesecake more often. 😁
    Mine is normally done in a 12" springform pan lined with parchment paper, 9×13 baking pan lined with parchment paper or 12 silicone cupcake cups baked in muffin tins and serves 12.
    SO going to have to make it keto FRIENDLY then work out the macros.
    Mine usually has cream cheese, heavy cream, eggs as tge cake. sour cream is usually put on top as soon as it comes out of oven to melt into the cake. My base cake recipe is never left unflavored and is flavored with one or combo of the following:
    Berries puree
    Grated citrus rinds and juice
    Melted dark chocolate that is melted
    Vanilla extract
    Almond extract
    Fruit extracts
    Pumpkin puree
    Cinnamon
    Nutmeg
    Cloves
    Peppermint
    Mango puree
    Kiwi puree
    Butterscotch flavoring
    Some of which are not as keto friendly.

    The ketoconnect even uses more sweetener than I would put in my cheesecakes if using powdered sugar.
    I would normally use half that amount in powdered sugar.

    Regarding the cheese cakes, i wasn't able to transfer second the cheecake to my mail box to put in my recipe folder. I'm sad that you don't give us the recipies yourself. What I had to do is to pull up notepad, type the whole thing out myself then email it to myself then get it into my recipe folder. very time consuming.
