To clean out a crawfish you soak it a heavy salt water bath for a few hours better for a hole day thatβs how you actually get rid of the bad stuff on the inside

you need to take out the intestines when they are alive. "chatrer les ecrevisses" is the french culinary word for it. also you can mix the heads and it'll give you even more flavor to your stock.
