Tried it today. I used low sodium tamari, low sodium soy sauce, water, brown sugar bocha sweet, fresh garlic and dried ginger power as I didn't have fresh, little extra sesame seed oil cause I love the flavor and sesame seeds. It was delicious!

why add water to the soy sauce if you are going to reduce it????

Awesome. I've made my own stir fry sauce a few times, but this may work out better. I've never bought ginger paste, but I do keep ground ginger so I may sub it.
