    This sounds like a fantastic recipe! I was thinking of making these with red chili sauce and pork, or shredded beef! I thought that I might be able to add a little to the dough like you do masa, but I'm afraid it might not be the right consistency. (Oh, and I do have that Amoretti Corn Extract!!!) Guess I won't know if I don't try!

    We are used to traditional pork and red chile tamales, that are made here in the US state of NM !
    Tamales can now be found just about anywhere, and there are vegetarian versions too. Here in the States, especially in NM, we use red Chile most often, but, we also tend to use green chile as well. NM is known for our Chile- Red & Green throughout the U.S, and world!
    Thank you for sharing this variation, I'm going to try it out only….I have to use my Red Chile…no compromising for me, when it comes down to traditional use of chile!
    And, we use Monterey Jack Cheese, not Mozzarella Cheese.
