    the sampling of your preparations that I've seen, it looks like you tend to favor a slow cooker over a pressure cooker. Is there a reason why? I got in the habit of using pressure cooker for everything while I was working to save time. Now retired so I'm around more and could use slow cooker. Are there certain types of recipes that are better in one over the other?

    If you ever make Niliโ€™s carnivore crepes (the ones with the egg whites and gelatin powder) I use those for tacos all the time. Also burritos and enchiladas. They work well. I will try heating the cheese wraps for tacos. Looks really good once microwaved. Yes, I would top with avocado, salsa and onion?

    Fun tip for shredding chicken. Put the slow cooked chicken into a bowl and use a hand mixer with 2 beater attachments. Youโ€™d think it would pulverize the chicken but for whatever reason it makes perfectly pulled strands of chicken.

    Blew my mind the first time I did it.

    No oven needed variant on the shell: You can just melt/fry 1/3 c shredded cheese (sharp cheddar) in the microwave on parchment paper though it might be a little lacier and there's grease to dab. If you prop it and the parchment paper between two jars on the counter, you get a flat bottomed taco shell when it cools. So no preprocessing of the cheese to make the folio and it can stand up. I make my own taco seasoning (with a little less heat) from Wholesome Yum's recipe to ensure no sugar, no preservatives, no anti-caking agent or cellulose. I use vinegary coleslaw for brightness and crunch as a topper so I see where the kimchi would bring its own benefits. Thanks!
