    Pumpkin Spice Caramel Cream Cheese Bites

    56 pieces total – 7 pieces to 1 serving

    Ingredients:

    8oz unsalted sweet butter

    6 oz cream cheese, softened

    1 packet or scoop Pumpkin Spice Caramel Keto Chow (or your favorite scoop pumpkin or vanilla protein powder)

    1 tsp vanilla

    2 Tbsp SF Besti Brown Sugar

    1 tsp pumpkin pie flavored stevia (to taste)

    ½ tsp pumpkin pie seasoning

    Liquid pumpkin pie flavoring optional (or alternate protein powder such as vanilla)

    Pinch of salt (omit if you use salted butter and taste first so that you do not over salt)

    Directions:

    In a saucepan melt 8 ounces unsalted sweet butter and cook on medium heat until the butter is browned.

    This process will take about 15 minutes so don’t rush this browning process. You can stir the butter occasionally.

    The butter will bubble and foam as it cooks, wait until you smell a popcorn or kettle corn smell then watch closely for the milk protein in the bottom of the pan to turn brown. Once you get the aromatic smell, start stirring the butter watching as it turns to a golden brown from the bottom of the pan up.

    Once the butter turns brown color then immediately remove from the heat. Don’t burn your butter

    Pour the browned butter into a mixing bowl and let cool for 15 to 20 minutes on the counter

    Add in all the rest of the ingredients to the cooled browned butter and blend with a hand or stick mixer until well blended

    Cover then put the mixing bowl into the refrigerator for an additional 15 minutes to cool down completely and solidify but not get too hard

    Remove from the refrigerator and stir with a spatula getting the sides of the pan then use the hand mixer or stick blender one more time to whip and blend the mixture

    Place 3 Keto fat bomb or candy molds and place onto a cookie tray

    Spoon or use a spatula to place the mixture into the candy molds. You can use a spatula to scrape the mix into the molds getting the air bubbles out and level off the tops

    Sprinkle tops with cinnamon or a little pumpkin pie spice (optional)

    Place in the freezer for about 30 minutes in order to get hard

    Remove from the freezer and pop out the bite size pieces and place into a freezer bag or container.

    You can take out a serving or a few pieces at a time and enjoy

    Macros for 7 pieces serving: 336 Total Calories/ 2g total carbs/ 35g fat/ 6g protein

    Wendy I made these tonight with vanilla keto chow and lots of pumpkin pie spice and extra Cinnamon and they are fantastic……my hubby is not keto but loves them and we think it’s like fudge

    Good luck, Harry! 🍀 It's too late for Harry on this tip, but not for you Wendy. Put a layer of Vaseline or diaper cream on all of the skin that can get irritated from the clean out before you start the prep. It really makes a difference. I just went through mine in July. Not too bad except I still have a lapband and the GI doctor disturbed it. 😳 I'll save you the disaster that caused.     Oh my gosh! I made quiche yesterday. For the pie crust I used Indigo Nili's recipe for the egg white wraps….I made a large, one in a crepe pan and made it a bit thicker…..greased the bottom of the pie pan so the "crust" would not stick. DA-LICIOUS! LOL

    I’m on my second case of Celsius right now. Great deal. Cheapest I can find it locally is 1.98 US per can. No small cases. Target and Walmart want over $2 a can. I always get it at Costco, even though my hubby thinks I am crazy, I love it. Just wish it was other flavors. If you can find their watermelon flavor or their Asian pear flavor, get them. So good.
    I also love Teton sausages. I just found their roasted garlic flavor. It took many weeks to find them after I saw Bobby Parish showing them.
    My husband doesn’t like the fancy slippers either. He just bought himself a pair of Minnetonka on sale at Famous Footwear (and I got him some money off with my rewards). He loves them and they should last years. The last few years he has been buying cheap Walmart slippers and every 6 months or so they rip and he needs to buy new so he spent a bit more on the Minnetonka but they should last. My dad had a pair and they lasted most of his adult life. My mom was always asking him to throw them out because they were really worn out. He never did. So buy a bit more pricey, good quality, and they last for years.

    I made the browned butter with fresh dill in it and poured it over my baked cod last night. OMG it made the cod taste like lobster. This was the first time I ever made brown butter and it is truly amazing. Can’t wait to do more experimenting with it.

    I just bought those hard boiled eggs and for organic they were not more expensive than my grocery store uncooked eggs, plus really convenient for egg salad. Just made some yesterday 😋
