    I am Egyptian we use the same spices all the time but we add others to it and mix it together and it’s called the 7 spices or baharat as you said. For the kofta , Kafka, kabab what ever you want to call it we also add finally minced onion after straining the water from then use the onion water on your hand to form it. It makes it test amazing specially if you cook it on the grill

    Buy your tahini from any middle Easter store you will have a lot of options and better prices than the other stores

    Bobby, those look really great but can you slice those pitas in half and open up the pocket to put food inside it it looks really thin?
    if I made them it's just my idea but if I had to make them I would make them a little bit thicker. So I could cut a pocket inside it and put it like a sandwich. For a pita pocket.

    For the kebabs:
    2 pounds ground lamb
    1.5 teaspoons each smoked paprika & cumin
    1 teaspoon ground coriander
    ½ teaspoon cinnamon
    ¼ teaspoon each ground cloves & cardamom
    2 cloves garlic finely grated
    Zest of 1 lemon
    1 tablespoon freshly chopped parsley
    1 teaspoon dried thyme
    Kosher salt & fresh pepper
    Olive or avocado oil

    For the tahini sauce:
    1/3 cup runny tahini
    2 cloves garlic finely grated
    Juice of 1 lemon
    ¼ teaspoon salt
    Ice water
    1 teaspoon freshly chopped parsley

    For the keto flatbread:
    2 eggs
    2 teaspoons baking powder
    ½ teaspoon kosher of salt
    2 cups 6oz of finely shredded full fat mozzarella cheese
    1.5 cup blanched almonds flour
    1/2 teaspoon dried thyme

    We made these tonight. We used a low carb whole wheat wrap (6 net carbs), but we have also made your pita bread (which is fantastic). We also added a green pepper fajita sauce (blended garlic, green chillis, lemon juice, cilantro). I have to say, one of the best meals ever I've tasted. The meat browns up crispy on the outside (we used ground beef), but remains tender and juicy inside. Unreal flavor, especially when you put it with a really nice tzatziki sauce. Great, great recipe. And a great video. Thank you.

    I made the flatbread for my family this morning and it came out pretty good. The mozzarella was hard to grate and the “dough” itself felt a bit sandy and gritty i think it was the almond flour. The bread had a good taste and the texture was decent it just felt almost like a corn bread-ish type of texture. It was pretty good though I was surprised at how easy it was to make. My family enjoyed it so glad it was a hit. Thank you for sharing!

    Bobby, do you ever go to Penzeys? They're a spice store that I believe originated in the Midwest. A few years back, they opened up near me in California. I absolutely love them for all my spice needs. They are definitely fresher than what I have found in another store or online. I highly recommend you check them out. They also have an online store.
