Today I’m sharing a video on how to make Kalbi Ribs or Korean BBQ Ribs using an Instant Pot. This video was inspired by Flo Lum (***see link below). In addition to the Instant Pot, she mentions broiling the ribs, which I have done and highly recommend. It makes them extra delicious. I usually cut them into strips to enjoy over a salad or with the bone attached with rice.

EQUIPMENT NEEDED:

Instant Pot *I have a 6 qt Instant Pot Duo Plus
Large Mixing Bowl
Tongs
Knife
Cutting Board
Zip Lock Bag (Gallon size) *If you choose to marinate the meat

**If you choose to broil the meat:
Oven
Foil
Baking Sheet

INGREDIENTS:

3-5 LBS Beef Short Ribs a.k.a. Flanken Style Beef Ribs
1 Bottle of Bibigo Korean BBQ Sauce (19.6 oz/480 g) or any Korean BBQ sauce *I found this bottle of Bibigo at Vons but I also saw it at Target too.

**If you choose to use the leftover liquid to turn it into a sauce:
Cornstarch ~1-2 TBS
Cold Water ~ 1-2 TBS
*Use equal parts, mix together first then add it to the liquid.

DIRECTIONS:

-Rinse & Drain the meat to remove the bone shards. *I do this about 3 times. (THIS IS OPTIONAL)
-Place the meat & entire bottle of sauce in the Zip Lock Bag (Gallon size) to marinate for 30 minutes up to 24 hours in the refrigerator prior to cooking. Otherwise you can place the ribs directly into the instant pot and pour the sauce generously over them.
-Plug in your Instant Pot when you are ready to cook the meat. Inspect all seals and nozzle/valves to be sure you have a successful seal to build pressure.
– After marinating the meat, pour the entire contents of the Zip Lock bag into the Instant Pot to cook.
-Arrange the meat so a majority of it is in the sauce.
-Close the lid and be sure to place the nozzle to SEALING.
-Using the MANUAL setting, cook the meat for 7 minutes.
-The float valve will rise once proper pressure is reached (~10 -20 minutes). The cook timer will start once the proper temperature is reached.
-When the cook time is done, turn OFF the Instant Pot
-Do a MANUAL pressure release by turning the nozzle from Sealing to Venting. Once all the pressure is released, the float valve will drop. *Sometimes it doesn’t -Use CAUTION
-Open the lid.
-The ribs are done. You can immediately enjoy them.

*Optional SAUCE:
-Turn the Instant Pot on to SAUTE and keep the lid off.
-Combine the equal parts of cornstarch and cold water.
-Add the mixture to the boiling sauce.
-Stir until thickened.
-Turn off the Instant Pot and enjoy the sauce by pouring it onto the ribs or using the sauce as a dip.

*Optional BROILING in the OVEN:
-Place the ribs flat onto a foil lined baking tray. (After they’re done cooking in the Instant Pot)
-Turn the oven on to BROIL
-Place the ribs into the oven to broil for 3-4 minutes. *WATCH them closely so they don’t burn.
-Take them out and flip them to broil the other side for the same amount of time.
-Once done, take them out of the oven. You can immediately enjoy them.
