    The New Year's Day black-eyed pea soup turned out really delicious. I had quite a bit of ham left over from Christmas. I did not use chicken broth and used plain water instead. My cookbook did have advice on how to cook the peas if not soaked overnight, by bringing them to a boil for 2 minutes, turning the fire off, and letting them sit for an hour. Phyllis Stokes, on her channel, gave advice on how to have beans give less gas by changing them into newn water and thereby getting rid of some of the chemical that causes gas. So, after they soaked for an hour, I put the beans to cook in new water. P.S. I did not use a pressure cooker so I think they did take longer to cook.

    How lucky can this be! I bought a pound of black eyed peas on Dec. 29th and am looking for a recipe on Dec. 30th and you just published this recipe yesterday, the day I bought the peas. That must bring a double portion of good luck. I have never cooked black eyed peas before. This recipe looks much tastier than the recipes in my cookbook. Happy and prosperous new year to you and yours.
