We live in San Antonio, TX. So we have mounds of Scotch Bonnet peppers at the grocery store. There’s a big Mexican community here in Texas so most anything spicy will be readily available. No complaints here! I like it hot. 🔥

I have to admit… and I love most of your recipes (other than the shameless promotion of Boirsin cheese)… but for you to say that a Scotch Bonnet pepper is almost identical to a Jalapeno pepper is just wrong on a few levels. The spice factor of these two peppers (Scoville units) aren't even close. A Jalapeno (2500-5000 Scoville units) is much milder than a Scotch Bonnet (445,000 Scoville units). Also, the taste of these two peppers is very different. Scotch Bonnet peppers have a much fruitier taste than Jalapenos which taste more like piquant green bell pepper and are more "meh" in flavour. These two peppers are not interchangeable and certainly not interchangeable in a classic Jamaican dish like jerk chicken. I really dismissed your recipe after you said that but later on you mentioned bbq sauce and I thought I will never make this recipe because it's bogus. Especially when Scotch Bonnets aren't that esoteric that you can't easily source them. And you live in NYC!! I live on the east coast of Canada (Nova Scotia) and I can get Scotch Bonnets at any time. And as a future tip, Grace's Jerk marinade in a bottle can be bought at Walmart very cheaply and it would yield a much more genuine result than this recipe Disappointed.

Scotch Bonnets are quite easy to find in Toronto 👍🏻 but we’re lucky enough to have a heavy West Indian population so there’s a demand for them

I LOVE jerk chicken. We do whole wings in the smoker with jerk seasoning, as finish it with the sauce. I can't wait to try your recipe in the Instant Pot!
