    BTW, a great thing about quinoa is that it is a complete protein 8 g in one cup (5 g fiber). You don't eat it and have to think "Do I eat almonds or peanuts with this?"

    Tip – don't waste your money on "pre-rinsed" or "washed" quinoa. I've found that even those products benefit from rinsing. And it's a markup for something that is simple to do yourself.
    Definitely going to try this recipe soon… looks delicious.

    The only mixed vegetables that I like are in salad. I have an aversion to the ones you used. I’m thinking more along the way of broccoli or cauliflower. So I supposed I could leave them out or just use veggies that I like? Other than that I love quinoa! It also makes a great cold salad with onions, cukes, tomatoes, salt & pepper in a vinaigrette dressing of your choice.
