    I love potato soup! I like to add chopped ham to mine. And you can always add some instant mashed potato flakes to thicken it. Or take out some of the soup, blend it and add it back to the pot.
    Thanks for sharing the recipe. That would also be a good base for Clam Chowder (minus the cheese).

    I hardly ever measure anything. Baking is the only time I am more percise. Everything else I just guestimate.

    One of the last min soups I'll make is with hamburger. I cook the meat in Better Than Boulion Beef then put in the crockpot. I just add random items usually to use up levftovers or cans that are closer to expiration date. I might make rice or noodles on the side to add after its done.

    Carbonara is what I get requested to make at my house. My kids really like.

    The best corn chowder. A staple food in New Hampshire and Maine. Cut potatoes and onion in small bite size. Place in large pot (5 qt)with just enough water to cover and cook until just tender (do not over cook). (You will keep the water). Take about 1 lb of salt pork, cut in small pieces and fry until very crisp. Add the salt pork to the potatoes, onions and the water. A 2 cans of whole corn and 2 cans of creamed corn and several cans of evaporated milk. Cook until very hot. Turn off and let cool down (this allows the flavors to come together) and then reheat to eat. When you fry your salt pork there will be a lot of dark brown , like sand, add some that to your chowder there is a lot of flavor there. If to rich you can use some whole milk in place of the evaporated but not to much as this is a rich filling chowder.

    Go watch some of " She's In Her Apron". She does a ton of different soups step by step. I was ill last night so I made potato soup. I just got out of bed and before I turned on my computer I decided to make corn chowder. Coincidence? Not likely. It's in the negative temps right now here in idaho and 2 feet of snow on the ground.
