    Hi Amy Jacky👋🏼. You’ve again inspired me to try out a local Singaporean chicken curry dish to cook in the IP (actually wifey requested for the dish as I was watching this😜) that I usually cook on the stove top. I’ll post to SG Instant Potters on Facebook if it turns out well and I will also post a photo at your InstantPot Recipes site if I can learn how to reduce the photo size😜. Thanks again for your words of wisdom and insights and of course for the inspiration to try new ways to cook established recipes.

    This looks wonderful. I have to try it because I love curry. Could you use red curry paste in this recipe or do you have a different recipe that would be a better use for it? Love red curry paste.

    Y'all I just finish this and it was so delicious. I used bone in, skin on thighs and it has turned out perfect. So easy. I had basmati rice and plantains with it. Absolutely amazing. Definitely will be added to my regular rotation. I'll be trying it with all veggies too.

    I made this recipe last night and it was fabulous. I made 2 changes. First was I didn't have any coconut milk so I substituted a quarter cup heavy whipping cream mixed with a quarter cup of water. This really helped thicken the sauce and made it smooth (but not too creamy). I also cut back on the potatoes by using 1 very large potato instead of 2 potatoes. This I cut into about 8 or 10 smaller chunks. This dish is so flavorful that it's definitely going into my "keeper" file. Tomorrow will be leftovers ….. Yay!

    My only feedback is don't worry about speaking clearly, it seems like you're a natural at that. Maybe you're concentrating on being clear so it feels like you sound a little quiet and subdued instead of happy about doing these videos. Just try to let the enthusiasm of cooking (which I know you guys love cooking and eating!) come through in your voice, enjoy! LOVE your site and posts and liking this new series of videos, "jia you" (add oil)!

    Great video looking forward to trying this soon. Question Can you use any curry paste if you can't find curry power? And what kind of flavor curry power did you use? is there different flavors of curry power or just one kind?
