On a cold rainy day on the Oregon Coast we decided to stay inside and put our Instant Pot to work. Today’s InstaPot meal was a BBQ Pulled Pork. Gary was the cook for this one as he winged it with his own recipe, and boy did it turn out delicious! YUMMM! It even made better quesadillas the following day for lunch. Hope you enjoy this video!

That looks delicious! I bought an Instant Pot last night and I have just cooked red beans in it for red beans and rice. They turned out great! I am looking forward to making the pork shoulder that I bought tonight! Excited!!
You can't cook under pressure without at least a cup of liquid in the pot.

You have to have liquid in the pot in order to get pressure, so that's why it was wonky at the end, no pressure.

Looks so good! Makes me want BBQ now. I do pulled pork Memorial day, 4th of July, Labor Day & New Years Day. That's been our family tradition. My granddaddy was a farmer, pigs cows & chickens along with the vegetables. He was one that had the pit in the ground that he would roast a whole hog for 3 days, the men taking turns at who stays up each night to watch the fire. I loved his BBQ pulled pork! He made up his own sauce too that we still use in the family. My daughter-in-law has even started using it. I don't use much sugar here. I burn stuff when I try to cook with it. LOL
Years ago, I bought an oval digital pressure cooker. It's heavy as HECK, but I can get a whole roast, a slab of ribs and a corned beef brisket in there without cutting it. I thought that was a genius design but you can't find them anymore. What's up with that? LOL
Thanks for sharing that recipe! I don't use a rub very often, I forget, and usually boil my meat before pulling. I need to drag out the pressure cooker and see how it turns out with it.
Which spices did you use for this recipe?
Shoot I would of saved the veggies and put them on the sandwiches.
This looks delicious! I love my Instant Pot too. I have a question for you if you don't mind. We also live in Spokane. And we're longing to go on the road full-time soon. Our problem is health insurance. Do you mind me asking what you guys do for health insurance? I'm 57 and my husband is 61. Too young for Medicare. I have a pacemaker and take medication for a heart condition, so we can't go without medical insurance. We appreciate any advice you could give us.
