    Lemons are pickled in other parts of the word and one of them is north Africa (citron confit). They are used to make delicious dishes.
    method 1:
    lemons are washed and cut at 4 different places. the lemons are put in a sterilized jar that can be closed hermetically. add inside the jar the quantity of 2 teaspoon of sea salt per lemon, add boinling water to cover all lemons (all the way up) close tightly and mix until salt is diluted. leave in a cool/dark place for min. 3 weeks.
    method 2 :
    lemons are washed and soaked 24 hours. Dried. Cross cut from the top (but not all the way down), 2 teaspoon of sea salt is put inside each lemon. Lemons are put tightly to each other in a sterilized Jar. NO WATER !!!. Close jar (hermetic). Leave in cool/dark place for min 3 weeks.

    Check out the Townsend video on the best way to preserve eggs. Spoiler. It's a "Slaked lime" aka "hydrated/hydrolyzed lime" and water solution. The eggs stay fresh for up to 2 years allegedly. And I wonder if this would work for this lime experiment.

    Definitely something I was interested in knowing, but I can say that if you have to buy store bought fruit or even veggies, always fill your sink or a tub with water and a cup of white vinegar, and soak the frutis or veggies in the water, it will clean them very well and no it will not change the taste of any of it. I even do it for store bought strawberries. Then when you have soaked them for about an hour, you can scrub them if you like and then you will see the crap that comes off of them in the bottom of your sink/tub. It works great and I highly recommend it.
