Problem with cooking steaks on a grate like that is the entire steak doesn't get seared.
I always saw/heard of compound butter but it never interest me till now. I recreated it last night and used it on a nice ny strip for dinner. I AM MISSING OUT. Thanks Sam as always!

Ok, crispy pork belly taco . But done right in small chunks, extra crispy with a banh mi style slaw. Maybe chulpa style tortillas or Gabe’s on Imperial. With spicy thai chili sauce.

The positives of grilling up north my beer doesn't warm up and even on high temp I'm grilling everything low and slow. Because it's to dang cold for the grill to get HOT. lol
