Please Note: If you are cooking in batches. Let your skillet cool completely drain the fat from the chicken and wipe clean. This usually takes 2-3 minutes. Sorry forgot to mention it in the video! ❤

It's how I fry my chicken now. Got the idea from Amy?, crazy asian chef that was belligerent as heck, mostly about not flipping the bird~ a spatchcock chicken. Now I pan fry all my chicken this way. Comes out crispy, yet with a robust rotisserie flavor, with no oil needed.
