I prefer green beans instead of carrots -does the cabbage and green beans or carrots pick up the ham flavor as well with this method

You're right. Steaming is better than boiling. More flavorful and nutritious. But that pot liquor honey! That's some good sopping with cornbread. I'll take it either way.
