Maybe it is worth mentioning that the frittata di pasta can also be done with left over pasta that has already been mixed with the sauce, not only white. At least that is how we do it in Napoli. Saluti e auguri for the great program you twi are doing.

I'm ashamed to admit I only recently discovered Pasta Grammar, but I've been bingeing all the recipe videos since I found it! I love your channel!
The 2nd recipe, the Leftover Fusilli "Muffin", looks particularly delish!! I have an unhealthy obsession w/ cheese, all kinds from cheddar to parmesan to cream cheese; I think I'm gonna try to make the Fusilli w/ some cheese stuffed tortellini or ravioli.
Question! Does the past have to be cold/leftover?
I only ask because I know when I make fried rice, it MUST be w/ cold rice, if one uses warm/freshly made rice it will turn to mush. I'm just wondering if it's similar w/ pasta?

I just wanted to mention that u shouldn't refrigerate open cans because the iron and the tin can seep into the foods and taint the flavour and in some cases cause negative health effects. Keeping open cans in the fridge is especially dangerous if the food is quite acidic, such as fruits and tomatoes
