I noticed the 3rd way after the cod was done, you put it on the plate, but it appeared to have had additional oil put on the plate am I wrong?

All of these look so good but I got confused on the second method, I thought that the rule of fish was skin side down first. Definitely making the first way though it looked so crispy on the outside but so soft on the inside.
