    The meat, the masa, the chili, the sauce, THIS is how I learned to make tamales many years ago. Except for no bouillon powder and no Insta-pot lol. We make them smaller in Texas and so that you can eat them with your hands if you want. But when they're hot, who wants to do that? Two key things I was thrilled to see: No baking powder in the masa and you put some of the broth/chili mix in the masa for the liquid. I don't know who decided baking powder was a "must have" for tamale masa but no. It does not make the masa cook up any nicer than it already does and I can taste it in there. yuk. I can see why people put it in for corn tortillas but even then, if cooked right it's not needed. PS: The secret thing that makes buillion such a great seasoning is MSG. No, it's not listed as that in the ingredients but it's there and there is nothing dangerous or bad about it. The stuff enhances flavor better than plain salt does. And Im with you on assembling the things. I will cook the meat and the chili and make masa all day long but NO I don't like spreading the masa and rolling them up or I'd make them a lot more often.

    I am going to be making these again soon. This is something I love but have come to understand why it is mainly a 1 or 2 times a year thing it is so time consuming. I just bought some blue masa have you ever used that? I bought it to make chips but was wondering about tamales and tortilla's

    TIP: There is a plastic tool called the Masa Spreader, available on Amazon, that makes that job way easier and faster! There is a little learning curve involved, but when you get it down you can do a dozen husks quicker than Steph did one. Check it out Steph if you don’t like that part of the job, it might change your “view” on that task! 😂😂😂

    These are the kind of tamales I like! My boyfriend is from the southern state of Chiapas and likes the jello-like tamales wrapped in banana leaves and they drive me crazy! 🤢 I am used to the kind of tamales we have here in the States and Northern Mexico which is like what you made here. We always tell each other that the other person doesn't know a good tamal hahaha. 😅
