Here is a simple recipe for pork tamales. You can substitute the fresh masa with Maseca. If you don’t like pork you can use any savory meat filling you like.

    I wonder can you make it into a casserole dish and put half the massa into bottom and then the meat mixture and then the rest on top of massa? Then put in a steam bath pan on bottom of casserole dish till done so I don't have to deal with corn husks, and cover with foil, it would be a tamale casserole then.

    I am white with no Hispanic heritage what so ever. I love tamales and have always wanted to cooking the. Out side of making my own massa from scratch this was a super easy recipe and the tamales turned out perfect! Will be making lots more.

    My only unsolicited opinion on this would be (and I’m a 10,000% germaphobe) is that soaking the husks in the sink is not a method I would use and that it’s been well documented that kitchen sinks can contain millions more bacteria then even your toilet. And before anyone jumps on me and says “yeah but you steam them an hour!!!!!! The bacteria is dead!!!” Then my reply is I just don’t like sink water food! However besides that one detail this looked like an amazing recipe and was a great video!

    I could not find hatch Chili's in Louisiana so I used canned Chipotle peppers and it turned out pretty good. I accidentally made huge tamales that took a long time to steam. lol, but I may try less Masa next time.
