Mmmm I think I'll take the gingersnaps & crush them, add a couple tbsp of melted butter & make them into a gingersnap crumb crust & make it into that pie you were talking about. I can't wait to make it.
Wow that dessert looks amazing! I can't wait to try it for the holidays. I think it would be easier to strain the pineapples over a bowl and squeeze the juice out with a big spoon.

Evening Gina!! pistachios pudding is the best only thing l am not too fond of ginger snaps l put fresh pistachios in grinder and add more too pudding. So l decided too use shortbread cookies

A lady in our church made this year's back. My sister Linnie & I loved it. The first time I made it I used jell-o instead of pudding lol. My grandchildren loved it, me not so much lol. Thank's for sharing Gina.
I like to add Maraschino Cherries in mine and sometimes Mandarin oranges too
