    Just found your channel and will be watching all the time!! Yes, Gramma would be upset about tossing that piece of ginger scrap. I save ALLLLLL my veg scraps in a big zip bag in the freezer. Onion skins, garlic skins, carrot peels, end of celery, everything (all from cleaned and washed veggies, of course). Then when the bag is full I make 2 – 3 quarts of salt free veg stock which I use for all kinds of things. Will even add some chicken base to it for different sauces. I'll be making this Lo Mien maybe today!!
