Just finished making this recipe. BEWARE!!! This is for a SMALL pot. We have the large one and had to scale the ingredients and time. Not just do to size but to amount of chicken. We only had 3 thighs and because searing took long had to cook only 15 min. The pot was too dry therefore I added like 1/2 cup chicken stock.

i DONT COOK MY CHICKEN THAT LONG…WHEN i FIRST BOUGHT MY INSTANT POT THE MEAT WOULD BE somewhat RUBBERY FROM COOKING TOO LONG.i KEEP IT NOW AT MINIMUM IP DIRECTIONS. Sorry about caps…I didnt notice cat sitting on that edge of keyboard…lol. For chicken thighs I do no more than 15 minutes….and its tender and perfect!

The only problem here is that it's been overcooked which causes the fats and juices in the chicken to get pulled out. That's one of the problem with instapot and not baking is that it's hard to time it so the juices are still locked in and not come out. It will still taste tender but you can see a lot of the tasty fats, chicken juices flow out.
