    The recipe works. It took about 18 hrs for my yogurt to get tangy when left out on the counter, overnight. The brand I used ("Native", green can) got very thick when refrigerated (if anyone has every tried Siggy's Triple Cream yogurt – it's as thick as that). Consistency was little grainy but, overall, a perfect substitute for dairy yogurt. I tried another YouTuber's recipe for coconut which required more steps and arrowroot flower that did not turn out well. Joy's recipe is fast and I got the consistency I needed.

    Pro Tip: Refrigerate your coconut milk in the fridge then when you are ready to use it, open the BOTTOM of the can and drain (And reserve) the coconut water. Now your can has only coconut cream in it, and you won't get any water into your yogurt bowl.
    Also, please remove the WHOLE lid when you open a can, leaving it sticking up while you scoop inside is just an accident waiting to happen.

    Just wondered about the probiotics. You mentioned you needed 4 x 15 billion for a total of 60billion. My question is if you have a capsule that has 90 billion or 60 billion do you only use one capsule or still need to use 4?

    I found organic coconut milk and organic coconut milk at a local store in town. The only thing that sux is that it has guar gum as an ingredient thickener and I can’t have that. 😑 Guess I’ll have to buy a whole coconut and make from scratch that way I don’t get all those nasty ingredients.

    I’ve never tried coconut yoghurt before. And actually the chilled coconut milk already looks like yoghurt. What’s the difference? Maybe just a little bit tangy?
