    Thanks for the support for Italy, my family lives in Sardegna, where the situation is a little less worse than on the main land.
    Also in the Netherlands, where i live now, we have very strict rules and restrictions, restaurants are empty, people are getting completely paranoid. We ourselves had to postpone the opening of our restaurant.
    Great idea teaching people how to make something from nothing, some don't realize what delicious and nutritious things they can make from leftovers, things they have in the fridge and pantry.

    This should be everyone's #1 recipe to get right. First learn the stock making and then this. Absolute restaurant quality that can be made by anyone. And the best possible Olive oil to finish. And crusty bread. And an appetite. Love how this series is working..

    I’m so glad you used the kale stems. I’m so tired of celebrity chefs throwing them away.

    Even if you don’t want kale stems in your dish, you can still save them to use in soup, just as you’d use celery.

    You're 3 for 3, my guy! (BBQ sauce, short ribs, and this.)

    Showed the hubby the video, and since it's supposed to be rainy and cold this week, he suggested we make it. We live out in bumf*ck so we had to scavenge what we could from empty shelves at the local Walmart. Pancetta became thick sliced bacon. Pretty, dark green kale became hybrid, pale, curly- leafed 'kale'. And the ditalini became elbow macaroni. (We lucked out on finding cannellini beans.) And we topped with real parmagiano reggiano from my last shopping trip to the city. (Although I lost my bag of rinds and had to skip adding it. I know it's probably buried in the back of the deep freezer somewhere.) Combined with some crusty bread and a bottle of wine, hubby declared it the best minestrone he's ever had. (He's down with anything that includes pork belly/ side meat.) I have to agree. We're now off to take a nap. I look forward to your next adaptation. 😉

    Was feeling really down (im a guitarplayer and all of my gigs got cancelled) and didn’t have anything to do except feel sad. Then I saw ur video and decided I was gonna make this. I invited my girlfriend over and some friends and now I’m eating a delicious soup with the people I love. Thanks for making me feel better in these uncertain times.

    Thank you for your thoughts. The situation here is quite heavy… lots and lots of people are getting sick. But we are tough and we will get out of this. Cheers from northern Italy
