I’ve been studying how soul food varies per region..I think I finally understand..in the south the collards , cabbage and Lima beans are the star of the show with some kind of smoked meat over a bed of rice vs other place it’s considered a side dish …you’ll find a lil garlic but no onions in our leafy greens ..I think this is why ..none the less they look good ..that pot Liqour afterwards is everything

I like my greens to be soft but not mushy. Des likes to have bite to his veggies too. I don't mind the softness. 90 minutes is great though, so dinner won't take all day.
