Recipe is below:
CHICKEN STOCK USING INSTANT POT
2 chicken thighs (or other chicken parts)
8 to 10 cups water
2 to 3 pieces ginger (thumb size)
1 tablespoon salt or less
Rinse chicken thighs in cold water. Remove chicken skin. Put into Instant Pot. Add 8 to 10 cups water. Add ginger pieces. Add salt. Set pressure setting at high pressure. Cook for 15 minutes. You can cook longer if you like. Let pressure natural release for 20 to 30 minutes. Remove chicken thighs and separate meat from the bones. Use chicken in your recipes. Put the chicken broth through a strainer to capture any bones, if required. Otherwise, just pour chicken broth into a big bowl. The chicken broth is now ready for your recipes, such as soups, congee and stews. Enjoy!
