    I have to say, it's so odd to see this now becoming a trendy food when I've been eating this since childhood. It's actually 2 meals here, bone broth which you can drink and holodec/holodets- when you pick off the meat, lay in a glass tray and pour the liquid over it and let it solidify, then eat it cold with mashed or boiled potatoes. Delicious, both of them.

    Why not just let the broth cool down and the fat will automatically come to the top. If you then place in refrigerator the fat solidifies and you can then just take it all off the top. Your making too big a deal out of it.

    I love bone broth from a cooked whole chicken, carrot, onion, garlic, spices. Beef bone broth is also very nourishing.
    I'm in my 70's. My mom made chicken bone broth often and it was always a treat.
    She learned it from her precious mom.
