    OMG! You are just too cute! Don't worry this old lady is just looking for a beef dip recipe to break in a brand new Le Creuset Dutch oven!! I grew up in the Midwest and it has been 30 something years since I have a Chicago style Italian dip sandwich! Perfect!! I got all of the items needed from your recipe and am ready to go first thing in the morning. I usually put my own spin or tweak a recipe the first time I use it but your recipe is so well done, the video is great and everything just makes sense!! So thanks a lot for the great recipe!! My husband ( a seriously Southern Gentleman) is going to love this sandwich!! Minus sausage!!

    The visual table of contents was a very humble narrative choice while also being informative, and providing a bit of foreshadowing. Nice touch. After your comment about Detroit Style Pizza, I searched your vids for a walkthrough, but couldn't find one. If you had a video on that style of pizza, not only would it have been a perfect throwback, it might have gotten me to sub on the spot. Regardless, I am subbed because you killed it on this video.

    HAHAHAHA you guys missed the best one! Dry with extra hot pappers, melted provolone, AND the hot au-jus ON THE SIDE IN A RAMEKIN (or bowl) for dipping. You want to apply the sandwich to the face hole moments after the dry bread begins to soak up the gravy but hasent yet began to loose its bready composure. its science

    Dude you gotta come to Chicago and eat at Portillo’s. I ate at Al’s for years until I found Porteezy’s. Not even close, much cleaner flavors, think of roast beef meets Pho broth almost, they keep their jus much simpler and it ends up working better. Great vid btw.

    You way over cooked it in the over it should be a nice pink color. And the beef is too thick when slicing. The beef will cook the rest of the way when you put it in the gravy

    Also, don't forget that cheese – Mozzarella really takes this sandwich to the next level. My go-to back when I lived there was: Mozzarella, Sweet, Dipped (I love spice, but it doesn't love me). I have also tried it with a little red sauce – this was recommended by this guy at a beef stand in Chicago. Pretty good, but not for everyone.

    I think you would enjoy a good sturdy Italian or French bread roll a bit more – those food service buns look kinda wimpy. All in all, great video – thanks for the tip on the spice mix

    Great videos guys!! I use to live in Oak Brook, Il. I miss Portillo's oh so so badly. You can order their food on line and have it shipped but it's insanely expensive. I've ordered the beef sausage combo kit for $100 for 6 sandwiches. It just doesn't taste the same. Maybe its cuz I felt like I got F'ed in the (_(_)'ss over what I paid compared to what I got while trying to eat the beef combo. It was quit sad. lol

    I really liked the feedback your brother(?) added to the taste test. It is good to have another point-of-view with something as subjective as taste. As with everything you do, you break things down into manageable steps and make it look easy AND delicious! As a side note, "au" means "with" in French and of course "jus" is "juice".

    I grew up in Chicago, and as a kid I didn't care for beef sandwiches. We actually make these on Christmas day and we use Turano rolls.
    Great video… just turn the mic off when you chew. 🤢
