    Have you tried adding a touch of peanut butter, or nutmeg or something else to increase umami and nutty flavor? Tahini Paste may be a better option because of those with peanut allergies .

    Carb Quick sounds like something I'll need to get in my pantry soon! I just got Xanthan gum and having so much fun making new recipes! Mainly using Xanthan gum and coconut flour atm for what I need, ran out of almond flour and I'm surprised to say I feel like I can do without!

    At 5pm I finished my gumbo using Carbquik and let me share my findings.

    I followed some of his gumbo techniques and some of my own.
    2/3 cups oil
    1 cup Carbquik
    I always sift flour and Carbquik stuck to my dry sifter.
    Oil in cast iron was heated until I saw a light smoke coming from pan.
    At the 30 minute mark in my cast iron pan the Roux had a super rich dark looking almost black color but never thick. I used his meat slurry idea in the hopes it would get thicker.
    It had a mild flour smell.
    The taste was okay but still tiny little grainy pieces like when using gluten free flour. So far gluten free flour has the same taste as AP flour for a Roux but still tiny grainy pieces.
    The Carbquik gumbo is okay but my 5 kids have not tasted it yet. That will be the real test. If they don’t taste a difference then I might keep this stuff for future roux recipes 😉

    Anybody have some freezer friendly baking recipes using carbquik?

    You added way too much xanthan gum. You should use less than a tablespoon per 1/2 cup of oil or butter. I’ve made dozens of rouxs with great success using xanthan gum.

    I've tried to make a roux with all the options you showed in the past but never carbquick. I tried carbquick and everything was back to normal 👌 nothing works better. Thank you!
