Hope you're still doing good. Thats a hard thing to go through…anyway about the chicken, you could try putting them under the broiler for a short time after cooked in slow pot to crisp up the skin? the meat should remain tender. I might try that instead of taking the skin off! Hmmm 👋😀👍
