Just to ask: When you put the water in the baking tray, how hot is that water? Is it rolling boil, or maybe 150° F?

Not a good recipe. Cream should be heat up to near boiling then temper the yolks with it. Where is the vanilla bean and it should be baked at lower temp. Just saying.
