Girl, those Silpat mats will change yo life! I have had them for years but it wasn’t until I saw Derek Simnett in Simnett Nutrition use his to make oil free fries that I realized how awesome they are for roasting veggies without oil. Amazing and clean up soooo much easier!
I wanted to ask if you’ve ever used the dried peanut butter? I just bought some today and may use to make this recipe. They press all the oil out of the peanuts so really high in protein but about 85% less fat than regular PB, even the natural because nuts are so high in fat naturally. They make almond butter that way too.

Healthy and easy to make. I think mine turned out well, however this recipe is not the best tasting (and I love dates), but I enjoyed them. In my opinion, possibly not the most accurate title either. Not an alternative to a traditional Peanut Butter Cookie… this cookie bakes up to be more of a granola tasting cookie. 🌟Peanut Date Granola Cookie🌟

He was afraid that the cup of dates might be "too much" … Wrong! It needs them, and for his sweet tooth, maybe a wee tiny bit more! I keep telling him, "Follow the recipe!" — He's learning, Jill! The only oil free peanut butter is the powder peanut butter like PB Fit. You are saying “oil free” which is not correct. You may be using “no oil added” but your peanut butter is NOT oil free. Very misleading.
Hubby is making this as I'm listening/watching you, but he's using oat flour that we had purchased; hope that's okay!! I'll let you know the results when we try them out! He's a real "Cookie Monster", so hoping this satisfies him as much as all of your other recipes we've tried lately! I have NO fears … can hardly wait for them to come out of the oven, but he's just making the flax "egg" and chopping the dates yet. Stay tuned! Lol
In Steven R. Gundry's book "The Plant Paradox" he states that peanuts are high in lectins that can't be destroyed even through cooking and should never be eaten. He pretty much says the same thing about tomatoes (that you can eat the tomato but not the seeds). In Esselstyn's book "Prevent and Reverse Heart Disease" which is a book based on a plant-based diet has recipes that call for honey. In Jordan S. Rubin's book "The Makers Diet" which is a book based on a biblical diet, you can eat beef, chicken and eggs as long as they were grass fed and grass finished. Three books, three different views. How is anyone supposed to know what to eat and what not to eat. I tend to lean towards the biblical diet because I figure whoever created us must of known what we needed to live a long, healthy and disease free life. I very rarely eat any meat though for humane reasons.

I love this recipe, thank you! I just have to substitute peanut butter with almond butter to reduce lectins and dates with stevia to reduce carbs.
