    Oh, and leftover mashed potatoes work great as soup thickeners for creamier soups. Tomorrow I plan to make a mushroom wild rice soup. That soup would welcome the addition of some leftover mashed potatoes. I would think you could simply add panko (or other) breadcrumbs (or leftover crushed up crackers that are on the verge of going stale) and add those to mashed potatoes along with some scallions to make potato pancakes. No recipe needed!

    Great ideas! I have a ton of left over stuffing, a bit of mashed potatoes, and some shaved Brussels sprouts, grated carrots, roasted red peppers, roasted sweet potatoes, parsley and scallions. I decided I'll add some lentils (I have the pre-made ones from Traders Joe's) and make veggie burgers! Then I can freeze those for quick meals. They work great chopped up in a big salad. Thank you again for all your great ideas. I love watching your videos!

    I make mashed potatoes all the time 4 the freezer. I make them with earth balance and plain soymilk..I scoop them into a muffin pan with an ice cream scoop, freeze then take them out and put them in a plastic ziplock & then microwave a potato muffin when I need a serving of mashed potatoes and they come out beautifully as tho they were never frozen. I again use plain soy milk. Don't know if other milks work.

    I have successfully freeze mashed potatoes in single portions using silicon muffins tins. 2 for me, 3 for my husband is good. I make it reheated in the InstantPot, Pot in pot method. Always perfectly.

    Great tips 💞 you could do a quick pickles with left over Cucumbers 🥒
    Years ago a friend and I made three huge catering size shepherds pies for my wedding a few days before. We froze them. And she cooked them on the day straight from frozen. They turned out fine with the mash potato on top. It even went crispy 🙂

    I freeze vegan Sheppards pie all the time and the mashed potato part is always perfect. I’ve not frozen plain mashed potatoes but I imagine it would be the same?
    I freeze cucumber slices regularly and use the slices in smoothies. Works great!
