    RECIPE (4 servings, 20min prep time)
    -4 zucchinis, shredded
    Sauté in olive oil for 7-10mins
    -3 cloves garlic
    -juice and zest of 1 lemon
    -4 Tbsp vegan cream
    -salt, pepper and herbs to taste
    Add to the zucchini.
    Meanwhile cook 300g pasta Al dente.
    Vegan Parmesan:
    -200g cashews
    -2 Tbsp nutritional yeast
    -1 Tsp salt
    Pulse a few seconds.
    Add the cooked pasta, pasta water, a few Tbsp vegan Parmesan and fresh basil to the zucchini.
    Stir and cook about 3 more minutes.
    Serve with more vegan Parmesan.
